This is a dish that was recommended to us by a customer here at the shop for the Chinese New Year, but in researching I couldn’t find much about it in my Chinese cookbooks. I wanted to get it right, so I contacted my sister-in-law as her family cooks the most amazing Malaysian/Singaporean food. Thank you LeAnn for your help on this! Lou Hei!

Basically the work is in thinly slicing and assembling it, pour over the sauce then have everyone get together and toss it with chopsticks.

LeAnn’s thoughts -Yes it's very common for people in Malaysia/Singapore to make this dish when celebrating Chinese New Year! And yes, I would recommend it too as it is delicious!!!! Every element/ingredient in the salad signifies a type of well wish, for example, noodles for long life, crispy pastry for prosperity. It's a really nice way for family to celebrate together as you all stand around the salad with chopsticks, and together stir the salad so that all the ingredients mix together. Then everyone eats it together!

Ingredients

Salad

·         500g thinly sliced Akaroa Salmon with skin off, ask for a Sashimi fillet

·         10 square wonton wrappers, cut into ½"-thick strips and fried till crispy

·         1 cucumber, sliced thinly

·         ¼ red cabbage, finely sliced on mandolin

·         1 Asian pear, thinly sliced

·         2 grapefruit or 1 pomelo, peeled, segmented

·         1 large carrot, peeled, thinly sliced

·         1 medium daikon, peeled, thinly sliced

·         1 red pepper, thinly sliced 3 Tbsp. pickled ginger

 

Sauce

·         1/2 cup plum sauce

·         2 Tbsp. light soy sauce

·         1 tbsp lemon juice

·         1 Tbsp. toasted sesame seeds

·         1 tsp. Chinese five-spice powder

·         1 tsp. toasted sesame oil

·         Whisk together

 

To serve

Salt and white pepper

Roasted peanuts

Toasted sesame seeds

Chopped coriander

Toss to assemble! Enjoy!
